Easy Peasy Mini Quiche

Here’s my go to quiche recipe that is so easy to make. It’s the perfect breakfast for an on the go person. You just mix, pour, and throw it in the oven to bake. You can make it your own by adding the veggies and cheese you like.

Veggie Filling

200g Kale or Spinach

50g Feta or any cheese you like

1 small Bell Pepper (Diced)

2 Green Onions 

Egg Mixture

7 Eggs

¼ cup Coconut Milk or regular Milk

¼ tsp Nutmeg

½ tsp Salt

½ tsp Pepper

2 tbsp Olive Oil (for greasing pan)


Direction

Preheat oven to 375 degrees. Generously oil a muffin tin. Chop kale and saute it until it wilts slightly. Take it off the heat to cool. In a bowl combine kale, bell pepper, feta and green onion. In a separate bowl Whisk eggs with milk and seasonings. Distribute veggie and cheese mixture evenly among muffin cups, about a tablespoon and a half of filling in each. Using a pitcher, evenly pour egg mixture on top of veggies, filling each cup up ½-¾ full. Bake for 15-20 minutes. Enjoy!

Store in the refrigerator in a reusable container and reheat in oven or microwave for daily breakfast.
